Mamas Marillenknödel

Mamas Marillen-knödel

  • 1 kg sehr reife Aprikosen
  • Würfelzucker
  • 600 g Wasser
  • 300 g Mehl
  • 60 g vegane Butter
  • 1 Ei
  • Salz
  • Semmelbrösel

Das Wasser mit dem Fett zum Kochen bringen. Das Mehl und das Salz unterrühren bis sich der deig vom Topf löst. Die Eier verquirlen und unterrühren bis der Teig glatt wird. Den Teig verkneten und anschließend zugedeckt für 30 mins ruhen lassen.

Währenddessen die Aprikosen einschneiden, entkernen und die Kerne durch Zuckerstückchen ersetzen.

Die Aprikosen mit Teig umhüllen und ca. 5-10 mins im Salzwasser kochen bis sie an der Oberfläche schwimmen.

Knödel anschließend in angerösteten Semmelbröseln wälzen.
